Why hello! I’m so glad you decided to stop by God Save the Quinoa. I’m Mandi, a half-marathon running, gym going, triathlon loving girl from Texas with a passion for food, fitness, and my labradoodle, Maggie. In my spare time, I love to cook healthy, feel-good-about-yourself meals and my dream is to one day, write my very own cookbook! I’m passionate about living a healthy lifestyle and inspiring others to do so by sharing my recipes. I created this blog to help others understand that cooking and eating healthy is easy to do and how you can make it become part of your lifestyle. 

I’m a vegetarian/pescatarian. I don’t eat meat but I do eat fish. Let’s be honest, it would take an army to keep me away from sushi!  Over the years, I’ve discovered that people don’t understand exactly what a “pescatarian” is, so to keep it simple I tell them I’m a vegetarian. …Problem solved! 

While you will find many vegetarian and pescatarian recipes on here, you will find your fair share of meat-friendly recipes as well. Just because I don’t eat meat doesn’t mean I don’t like to cook it! I love to create new recipes using all types of foods. My husband, Greg, can attest to this. My recipe book is full of scribbles and notes about how to make “meatless” and “meat-eater” versions of healthy creations. Greg is such a trooper for putting up with my shenanigans and kitchen concoctions. But I have to give credit where credit is due, he is the best taste-tester you will ever find! 

How God Save the Quinoa was created

I started cooking healthy meals as a way to make healthier decisions and save money from eating out. Once I got the hang of the whole cooking thing, I started creating simple, healthier versions of my favorite recipes that could easily be altered to satisfy the appetites of meat eaters and non-meat eaters alike. 

After a few years, I accumulated so many recipes my recipe book was practically bursting at the seams! Everyone told me I should start a food blog but I continued to dance around the idea because “I didn’t have a good camera”. Well, for Valentine’s Day in 2014, Greg surprised me with an awesome camera, a how-to photograph food book, and the domain space for what is now God Save the Quinoa. Needless to say, I was beyond excited and here we are!

A few other random facts

  • I’ve lived in Texas my whole life.
  • I have a labradoodle named Maggie who I absolutely adore! …But, I’m sure you figured that out from all of the pictures I have posted. 
  • To date, I’ve finished 14 half marathons and counting… I’m addicted! 
  • Greg convinced me to do a triathlon once. Now we can’t stay away from them and our garage is full of bikes!
  • I go to the gym every day before work. Waking up at 5 am sucks but is SO worth it! 
  • I LOVE the outdoors and my favorite place in the world is Telluride, Colorado. That’s where Greg proposed to me at! 
  • When I’m not cooking or running I’m trying my hand at new DIY crafts. I’m really into calligraphy and watercoloring at the moment!
